     Hericium erinaceus is the fruiting body of the Hydontaceae fungus Hericium erinaceus. Monkey Mushroom, Hericium erinaceus, and Monkey Mushroom are traditional Chinese precious dishes. The meat is tender, fragrant, and delicious. It is one of the four famous dishes (hericium, bear paw, bird's nest, shark's fin). It is called "mountain monkey head and seafood shark's fin". This kind of fungus of the family of Odontoides has hairy fleshy spines on the surface of the fungus, about 1 to 3 cm in length. Its fruit bodies are round and thick, white when fresh, and from light yellow to light brown when dried, with a narrow or slightly base. It has a short stalk and a swollen upper part with a diameter of 3.5-10 cm. It looks like golden hericium from a distance, so it is called "Hericium" and also like a hedgehog, so it is also called "Hedgehog Fungus".
